There should be a way to add new values to the select list when editing a record as an Admin. Currently it seems you have to drop back into table edit mode to make and field level select list changes there where can be time consuming and disruptive of the workflow.

I suggest using a linked table with user permissions restricting who can add new options. You cannot add new single-select options to Airtable fields either.
